Break Room Dining: Steel Cut Oats Salad
Another Friday night at work and another break room ‘cooking’ experience to chronicle. Today I decided to bring some bags of leftovers to see what kind of magic I could come up with in the dead of the night, starving, working, and without a stove.
I did find an old steak knife in the break room, so that was my tool of choice for the chopping and cutting.
Ingredients:
- Raw
- onion – kind of chopped
- cabbage - slivers sliced off 1/2 head
- beet – cut into tiny pieces
- green pepper – cut into tiny pieces
- yellow zuchinni – cut into shoestring pieces
- ginger root – 1/2 tsp. finely chopped
- Soaked/cooked 3/4 cup steel cut oats
- 1 Tbls. Vegenaisse
- salt
- 1 tsp. raw sugar
- pinch of ground cardamon
- 1 tsp. (approx) chopped fresh dill from my garden:)
I just had my steel salad and it was really good, just something missing. I”m not sure what. It has great texture with the combination of so many things, it’s creamy, a bit salty and sweet, but it just needs something, maybe some fresh mint..yea, next time fresh mint it is.
