My mother was in town recently and my sister requested some special home made food for her birthday…her 50th birthday!!! We are so spoiled.
My mom planted herself into a little section of my kitchen counter, between the toaster and the microwave, avoiding the two computers being repaired on the bar portion of my kitchen cabinets.
I haven’t been sucessful at making meatloaf in my life, so this was a good lesson and with photos I will be able to do it again someday!
Notice the mixing bowls. A few years ago the very same mother gave me a box of “stuff from her kitchen” and that stuff included these excellent 70’s mixing bowls, and the baking dish that the meatloaf is in the last picture. They are inspiring, all the good food that’s been cooked and mixed in those bowls…exciting.
What should I request for my birthday this Friday?? Hmmm She made me some scalloped corn with the meatloaf, I guess that’s good enough:) I LOVE SCALLOPED CORN!!
But for now, here’s the meatloaf.
- 2 lbs. Hamburger
- 3/4 package Saltine crackers crushed up
- 1 egg
- 1/4 cup ketchup
- 1/4 milk

Big bowl = Meatloaf & Small bowl = Scalloped Corn
- Oven 400 degrees
- Mix crackers, ketchup, egg, milk, leave to soak for about 5 minutes.
- Use your hands to mush in the hamburger, make sure it’s fully mashed together.
- Put the loaf in any pan that’s at least 2 inches high, and leaves room around the edges for whatever drippings happen.
- Bake for about 20 minutes to get the top browned.
- Reduce the heat to 350 and cover.
- Bake for about an hour or until the middle is fully cooked.
- Drain off any drippings.
- Allow to set for about 10-15 minutes before serving.
