Curry Tofu Snack

Curry Tofu SnackIt’s around midnight and time for some food to go into the body. I prepare cups of tea and toast for the men of the house (British husband and 13 year old nephew who are busy playing a video game). I don’t want toast. I don’t want a bowl of cereal. I don’t want the left over mac and cheese. What did catch my eye? The silken tofu I had been draining for some unknown recipe in the near future. The future is apparently midnight on a Tuesday/Wednesday.

I scooped out about 3 heapting tablespoons of tofu, smashed it up with a heaping tablespoon of Vegenaise, a few shakes of a sort of local vinaigrette (Grandma’s Cool and Zesty), about a tablespoon of slightly chopped fresh onion, and a shake or two of curry powder. The smashing continued and suddenly I got the inspiration to put a tiny bit of chopped carrot in the mix. That detail didn’t make it to the lovely graphic because I only JUST remembered it was in there.

I had a packet of small flour tortillas and spread a bit of the delightful combination on two of them, folded, and completely enjoyed the holy loving tofu-goodness out of it. Creamy and slightly sweet, with that hint of curry and the crunch of the carrot, oh I’m ready for more right now.

I hadn’t used the silken tofu before, but I know I like extra firm of the other type so I got extra firm of the silken and it’s so smooth, so delicate. I can now imagine making all kinds of good things with it….but never forget this delicious midnight snack!! Late night protein with that creaminess my taste buds crave.
