Recipe: Beets Beans Bravo Beautiful
Today I wanted to make some food that would involve some preparation. I wanted to make something that would allow me to be in the kitchen for a while, alone, cutting, chopping, stiring, making..etc.
There are three mouths to feed, so I have the chance to make a variety of goodies, not just to please eveyrone, but so my time in the kitchen is well spent, creative, and makes me feel that satisfied cooking feeling.
Mouth #1 – Dinner for this loved one consisted of a Quorn chik’n cutlet cooked in the skillet with a touch of olive oil, served on a sandwich with ketchup. (Mouth #1 choice, not mine.) And, a salad with some raw fresh beet from the farmer’s market and other vegetables.
Mouth $2 – This mouth is 12 years old so good old mac and cheese was on the menu. This time, however, I used tapioca flour. I had no idea how to use it, but I messed up with the old method of putting the flour in melted margerine and then adding the milk…not a good idea. Tapioca flour is more like corn flour…lesson learned. There was a salad to accompany the mac and cheese:)
Mouth #3 – ME I wanted something different, something using the amazing fresh vegetables we got at the farmer’s market..so I made something up.
I got out a can of chick peas, and a can of black beans, rinsed and mixed them together, but only used about 1/3 of the combo. I heated some some olive oil, onions, and peppers, added the beans, a bit of Tamari and water, seasoned with a tsp. of cumin seeds, a pinch of cinnamon, ground cloves, and a squeeze of agave nectar. I got a beautful yellow zuccini from the market and put a few slices of it in the beans. After this had cooked a bit, bubbling and tasting soooo good, I finely chopped about a cup of fresh farmer cabbage and put it on top of the bean mix, put on the lid, and let it steam…oh….it’s gonna be good!
There was a bowl of leftover basmati rice, the perfect accompaniment for my saucy bean stew. Along side the hot portion of my dinner I had a salad that was a collection of raw beet, lettuce, onion, pepper, raw zuccini, and a tablespoon of Vegenaise.
Ohhh it was a fantastic vegetabley dinner that I want to have again….tomorrow:)
Later there will be the homemade pumpkin bread from the farmer’s market and a cup of hot tea.
